Chris always had a passion for food – growing and cooking it. He started working in commercial kitchens at 17 and quickly developed a desire for learning and understanding the origins of products.
His cooking is influenced by his many travels to Europe and North Africa and the time he spent living and working in the United Kingdom and Germany. Inspired by the natural beauty and the pure produce of Tasmania he eventually made the island his home with the desire to create unique menus and experiences.
While the dry East Coast of Tasmania is not the easiest place to grow food, he made it work by only growing What Grows. He taught himself how to use the natural conditions and turned a bare piece of sand into a lush and fruitful garden. What Grows represents the idea to let the things that are growing grow and use what is there to create beautiful and seasonal meals.
His menus are inspired by the seasonal produce that surrounds him on land and in the waters of the East Coast of Tasmania.
